Answer

No, removing a user with an Account Administrator role from your account won't impact your connectors and destinations. However, we recommend you ensure you have at least one Account Administrator in your Fivetran account.

In addition, if the Account Administrator is the authorized user of a connector, we recommend that another user with appropriate permissions re-authorizes each impacted connector with the new user's credentials.
